I had a craving for noodles and veggies but wanted to have something home made so took myself off to Coles and bought a bunch of stuff. I didn't follow a recipe, rather just cut all the veggies up and threw it all in together. It was so yummy! Bonus that it is very low fat and organic!
Bought - Organic Miso - Coles, Organic Soba Noodles - Coles, Long red chilli, bunch of coriander, Dried shitake mushrooms - Coles, Pak Choy, Chinese broccoli, Soy sauce, Corned beef - cooked the night before bought it a big chunk from Coles.
How to - Chop up the veggies into bit size bits you can put straight into your mouth. Set aside. Put some water on the boil the soba noddles in (these are very quick to do, you also don’t need salt or oil in the water as you normally would with pasta) they take about 4 mins and the water must be boiling rapidly when you put them in. Keep your eye on them as they don’t take long.
As soon as they float they are pretty much done, pull one out to test it. Once they are cooked, drain them, rinse them and leave them in the strainer until you are ready. Boil a kettle for the miso soup, empty the satchel of miso (I used 2 per big bowl) into the bottom of the bowl. When the water has boiled pour into the two bowls about a cup - a cup and a half. Stir the miso and water together.
Just to soften your veggies slightly put them into the microwave for a few minutes. Add soba noodles, Pak Choy, Chinese Broccoli and dried shitake. Add some more water to cover all the veggies. Add your chopped corned beef (or whatever leftover meat you have in your fridge!) add your chilli and coriander and then you are ready to slurp away!
