Made - All The Veggies In Your House Stir-fry

I made this the other night but had no had time to post until now...

I got out of the freezer some organic beef strips I bought from the Woolworth's Organic meat section and let that defrost in the sink. Got home, and proceeded to chop up all the veggies that I could find in the crisper. There was half a white cabbage, 1 carrot, a capsicum, a few snow peas, broccoli, mushroom, pumpkin and also some left over Chinese broccoli and left over pork that I roasted the other night. There was also a random tin of Italian 4 bean mix that I threw in there (liquid included) too. LP wanted something in the bottom of the stir-fry so I did some organic soba noodles as well.
Step 1-You will need a large fry pan (electric or one that goes on the stove, it doesn't matter) a smaller fry pan for the meat (use any kind of meat for this, it goes with everything from chicken to kangaroo!) and a pot to boil the water for the soba noodles (also you can use rice, quinoa, rice noodles anything!)

Step 2 - A bit of multi-tasking here! Put your veggies on first (they will take a little longer that the meat) At this stage I only use a little bit of salt and pepper to season the veggies and I also put a tiny bit of olive oil into the pan to get them going. Once they are starting to soften a little put your meat on.

I put a little olive oil into the pan, add the meat, add some garlic and let them go. Put the water on for the noodles as well as they take about 4 minutes, or less, they are ready when they float. You don't need to salt and oil the water for these either, just plain boiling water . I always just test a noodle when they are boiling kind of the same way you test if pasta is ready.

Once you're happy with the meat and veggies, throw everything into the same pan as the veggies and mix well. This is where I add my taste. In no particular order I add a few splashes of fish sauce, a big glug of sweet chili, about half of the bottle of oyster sauce, more pepper and a big spoonful of peanut butter.

Mix this all in until all of the meat and veggies are coated. The peanut butter takes a little while to melt so just keep mixing it all through till this is done.

During all of this you should have put your soba noodles into the (rapidly boiling) water and they should now be ready. Drain them and rinse them off under the water. Keeping them in the strainer so that they drip dry while you finish mixing your stir-fry.



Then all you need is 2 big bowls, add the noodles in the bottom and spoon the fabulous, healthy stiry-fry onto. I have added a big bunch of my favourite herb, coriander and serve!
 


So many good nutrients in this meal with all the different veggies AND you would have plenty for leftovers tomorrow night!
