That is my excuse and I'm sticking to it!
So after we woke up around 9:30am and fluffed around a bit we both decided that we felt like eggs. Off we went to do the weeks shopping at Harris Farm (bloody love that place) and bought everything we needed.
Bought - Eggs, fresh pania bread, spinach leaves, salt, pepper, grated low fat Coon cheese, avocado
First things first, get a pot of water and a little white vinegar boiling on your stove. Once the water is boiling grab a long wooden spoon and swirl the water around and around until its moving on its own in a circle. I get a small coffee cup and crack my egg into there and then slowing put it into the middle of the swirling water. It's the only way that I have figured out how to poach an egg but if you have your own technique that works, go for it!
Put your bread into the toaster and keep your eye on those eggs. I have a slated spoon that I pick up the eggs and touch the yolk (we like it to have a little bit of runniness in it) when I'm happy with it I put the eggs onto some kitchen towel to drain.
Grab your toast (add butter if you like, I didn't) pop your spinach leaves directly onto the toast. Put your eggs on top of the spinach, add salt and pepper and then a little grated cheese on top of the eggs. Cut up a little avo and put on the side.
I then also add a little tomato sauce as well, makes it extra yum to me!
