Made - Healthy Chilli

One of the favourite mealsto eat in our house is chilli, it's so easy, pretty healthy and so good! I forgot to take a picture of all the ingredients but don't worry I know what they are so you can create this easy healthy master piece too!

Bought - 2 cans of red kidney beans, ground cumin, chilli flakes (just from Coles in the herb section), 1 can of salt reduced corn, 1 can of mexi beans from the Mexican section of Woolies or Coles, 1 tin of plain diced tomatoes (salt reduced if you can find it), one small tub of tomato paste (sale reduced), olive oil, garlic olive oil (or plain minced garlic), 2 small onions, salt and pepper, dried coriander (I prefer fresh but didn't have any), Low fat Greek yogurt, 500g lean beef mince, 2 skinny carrots (or one big one, doesn't matter)

Need - A big pot, spatula or wooden spoon

First things first chop up your onions and carrot. Put some garlic oil (or plain olive oil) into the pot and throw your onions in to brown. If you don't have any garlic oil, put your minced garlic in now as well (about 1 heaped tea spoon) Put a good helping of pepper in with your onions and stir to cover them all. Add a pinch of salt here as well, I don't tend to add to much because all of the tinned ingredients all have a large amount of salt in them so you don't really need it.

Once the onions are not quite done throw in your carrots and give them all a stir to stop it sticking and burning on the bottom of the pot.

Once your onions and carrots are done throw in your lean mince.

When your mince is browned but not 100% cooked start to throw in your tinned ingredients. It doesn't matter in what order. I put one of the red kidney beans tin's in with all its liquid and drain the other, drain the corn and throw in the whole tin of tomatoes. Also add the entire small tub of tomato paste and a little more pepper.

Once all of the ingredients are in add your cumin and chilli flakes. I don't use a lot of chilli as I don't really like things to spicy, I would say for this amount of chilli I add a table spoon and a half. I also add about 2 table spoons of ground cumin.

Once everything is in, give the mixture a lots of stirring to get everything combined. Once its up to the boil turn the heat down a tad and let it simmer for about 15 minutes. Make sure check on it and give it a stir every so often just to make sure it doesn't burn on the bottom of the pot.

The mixture will thicken up a lot and once you are happy take it off the heat and spoon into a bowl. Add a large blob of low fat Greek yogurt and some fresh coriander or dried (whatever you have) and enjoy!

This will make enough to have a bit of left overs which you can make into tacos, Mexican salad, burritos ANYTHING!
