Made - Indian Curry

LP decided at around 5:30 that he wanted an Indian curry. I didn't have time to go to the shops and had taken out of the freezer some beef strips which were defrosting on the sink.

LP then proceeded to get out all of the Indian type spices that we had, threw them into the mortar and pestle and proceeded to ground them all up. Very adventurous for a Monday night if you ask me!

It actually turned out to be pretty good so here is the recipe!

Bought (I had all this in my cupboard) - salt & pepper, dried garlic granules, dried coriander leaves, cumin seeds, cayenne pepper, cinnamon, ground turmeric, sweet paprika, 2 onions, 2 thin carrots, light Greek yogurt, light sour cream (not pictured) olive oil, diced beef and a small turnip (not pictured) mortar and pestle

Grab a big pot and then the first thing is to chop up your onions, not dice them just leave them chunky. Put some olive oil into the pot and throw in your onions to brown. I also put my turnip in here as well to give it time to soften.

While the onions and turnip are cooking grab your mortar & pestle and start to build your spice mix. LP just put in about a teaspoon and a half of each spice (maybe a little more or less) and then proceeded to smash them all together for about 10 minutes.

Once you are happy and all of the spices are combined Chop up your carrots and throw them in with the onions, making sure to give everything a good stir.

Once the onions are brown and the turnip is soft put your diced beef into the pot to brown. You may need to add a little more olive oil here.

When the meat is brown it is time to add your spice. Put your spices in bit at a time and stir so it will cover everything into the pot. When your happy with the spice turn the heat off and get a big blob of light sour cream and stir to combine.

Then that is pretty much it!

Spoon into bowls and cover with a blog of light Greek yogurt and some fresh herbs (I didn't have any...again)

Yum and easy!
